My favortie recipe is Pepermint Icecream-Mint chocolate chip cookie ice cream sandwhiches.
1 c. + 2 tbsp. flour
1/2 c. butter
6 tbsp. sugar
6 tbsp. firmly packed brown sugar
1/2 tsp. vanilla extract
1 egg
1 pkg. Nestle mint chocolate morsels
Mint Flavoring to taste
Combine butter, both sugars and vanilla; beat until creamy. Beat in egg. Gradually add flour. Stir in chips. and add mint flavoring. Drop by tablespoonsful onto ungreased cookie sheets. Bake at 350 degrees for 9 to 11 minutes. Once cooled, place one cookie on a plate, add a large scoop of store bought pepermint icecream, then top with another mint chocolate chip cookie on top.

I wanted to share my mom’s awesome recipe for fresh eggnog! (can be made without alcohol but it definitely has a KICK with it!)
Mom’s Yummy Eggnog
12 very fresh eggs
1-1/2 cups of granulated sugar
1 quart of milk
1 quart of whipping cream (sometimes I use 1 quart of Half and Half and a pint of whipping cream)
1 cup of Rum
1-1/2 cups of Bourbon
1-1/2 ozs of Cognac
Grated Nutmeg
Separate the eggs. Beat yolks until they are light in color. Add ONE cup of the sugar. Slowly pour in rum, bourbon and cognac…stir in and slowly add milk…stir in. Add grated nutmeg.
Whip the cream to SOFT peaks (it should still be “wet”), adding 1/4 of the granulated sugar. Fold the whipped cream into the yolk mixture. Beat the egg whites to soft peaks adding the rest of the granulated sugar. Fold the whites into the yolk mixture. REFRIGERATE overnight and keep chilled between servings.

My favorite holiday recipe is:
my mom’s broccoli salad
1 head of broccoli
1 cup mayo
1/2 cup sugar
6- 8 pieces of bacon
1/3 cup cider vinegar
1/2 cup chopped walnuts
1/4 cup raisins
mix sugar and mayo and set aside to let set
mix all other ingredients together. When sugar/mayo mixture has set, mix all ingredients together and enjoy!
