INGREDIENTS:
1 Pint of Heavy Whipping Cream
2 Cups Sugar
1 tsp. Vanilla
1 Bag of Miniature Marshmallows (12 -16 oz.)
½ Cup Chopped Pecans
2 Cups Raw Cranberries, Chopped
2 Cups Diced Pineapple (Fresh or Canned, Drain if using cans)
DIRECTIONS:
In a bowl combine Chopped Cranberries, Pineapple and 1 ½ Cups of Sugar, Stir and set aside for around 1 hour.
Place Cold Heavy Whipping Cream in a Chilled Bowl with ½ Cup of Sugar and 1 tsp. Vanilla.
Whip using a Hand Mixer or KitchenAid until stiff peaks form.
Slowly stir in Fruit Mixture, Marshmallows, & Pecans, and mix well.
Cover and refrigerate overnight before serving.

Why Do The Cranberries Need To Sit In the Sugar Mixture For An Hour
You don’t want to skip the step of allowing your cranberries to soak in the sugar and pineapple mixture. The reason is cranberries are naturally tart. Soaking in the sugar mixture is going to sweeten them up but also soften them a little bit. If you skip this step your salad will not turn out the way it should.
It will be a bit tart, and you probably won’t enjoy it as much.
Can You Freeze Cranberry Fluff Marshmallow Salad
I wouldn’t recommend freezing this salad due to the heavy cream used. You will find when you go to thaw your salad, it will curdle a bit due to the base of the salad. Plus the marshmallows would probably turn extremely mushy.
