Chocolate Cherry Cupcakes Recipe!


Ingredients

  • INGREDIENTS:
  • Chocolate Cupcake Ingredients:
  • 1 3/4 C Flour
  • 2 C Sugar
  • 1 C Cocoa
  • 1 1/2 TSP Baking Soda
  • 1 1/2 TSP Baking Powder
  • 1 TSP Salt
  • 2 Eggs
  • 1 C Whole Milk
  • 1/2 C Oil
  • 2 TSP Vanilla
  • 1 C Boiling Water
  • Frosting Ingredients:
  • 1 C unsalted butter, softened
  • 3/4 C cocoa powder
  • 3 C powder sugar
  • 2 TBSP espresso
  • 3/4 C heavy cream

Instructions

  1. Chocolate Cupcake Directions:
  2. Preheat oven to 350 degrees.
  3. Mix the flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl.
  4. In a separate bowl add the eggs, whole milk, oil, and vanilla.
  5. Add the bowl containing the eggs, whole milk, oil, and vanilla to the bowl holding the dry ingredients.
  6. Mix all together until fully incorporated.
  7. Beat for 3 minutes on medium.
  8. Slowly add the boiling water starting with a small amount then pour in the remaining boiling water.
  9. The batter may be a little runny.
  10. Scoop batter into cupcake paper liners until 3/4 full.
  11. Bake at 350 degrees for 20-25 minutes.
  12. Remove from oven and allow to cool for 10 minutes.
  13. Remove from cupcake pan…. place on a wire rack to cook completely.
  14. When cupcakes are fully cooled….make a hole in the center of the cupcake with either a small spoon or a cupcake scooper…set aside until all cupcakes have holes.
  15. Fill with the cherry pie filling…..then frost.
  16. Frosting Directions:
  17. Beat the softened butter on its own until smooth.
  18. Add cocoa, powder sugar and espresso…..continue to mix until it becomes creamy. If it doesn’t cream then add drops of heavy cream into the butter mixture until it becomes a smooth and thick texture.
  19. Test by taking a spoonful of frosting, turning the spoon upside down to see if the frosting will hold onto the spoon….if not add more powdered sugar.
  20. If so then spoon the frosting into a pastry bag with a #13 tip….starting on the outside of the cupcake with the frosting work inwards to the center of the cupcake.
  21. Cherry Filling:
  22. Use 1 can of cherry pie filling in the center of each cupcake.
