Mini Taco Bowls Recipe
INGREDIENTS for Mini Taco Bowls
- 1 lb Ground Beef
- 2 tbsp Taco Seasoning
- 1 diced Tomato
- 6 Jalapeno Slices
- 12 Corn Tortillas
- Shredded Cheddar Cheese
DIRECTIONS for Mini Taco Bowls
- Brown ground beef and drain.
- Dice jalapenos and add to beef.
- Add 1/4 cup water and taco seasoning and cook over medium heat until water is absorbed.
- Reduce heat to low.
- Heat each corn tortilla in the microwave for 30 seconds to soften.
- Using a 3-inch cutter (like a jar lid) cut 2 circles from each tortilla.
- Press each circle into the cup of a mini muffin pan, fold ing sides as needed.
- Place in 350 ovens for about 12 minutes (until tortilla is crispy).
- Place each shell on a cooling rack and fill with taco meat.
- Top with cheese and diced tomato and a leaf of cilantro (optional).
Can I Use Flour Shells Instead of Corn Tortillas for Mini Tacos
Yes. You can use flour, it just won’t get as crispy as the corn shells will. I would also place a fork in the center of the shell and poke into it, so that it won’t puff up as it cooks in the oven.

Have you tried making these in regular muffin pans? Would that eliminate the need to cut circles from the tortillas?
I think you would still need to cut them some, a tortilla would be too large for the regular muffin pan. But it’s worth a shot! I just haven’t personally tried that.
This looks like a great idea for Super Bowl Sunday. Do the shells get soggy after adding in the meat?
If you let the meat sit in there a while they could, especially if there is any liquid remaining in the meat. Be sure to drain the meat really well, and I would wait to set out or serve as close to them being eaten as I could.
