Red, White, & Blue Fruit Pizza Recipe

INGREDIENTS:

For the Cookie Base:

2 1⁄2 cups of granulated white sugar
1 3⁄4 sticks unsalted butter (14 TBS), room temperature 1 1⁄2 cups all purpose flour
1⁄2 tsp baking powder
1⁄2 tsp salt
2 tsp vanilla
2 large eggs

For the Frosting:

12 ounces cream cheese, room temperature
1 stick unsalted butter (8 TBS), room temperature 1 tsp vanilla
1 3⁄4 cup powdered sugar

For topping:

1 pound strawberries, rinsed, hulled, and sliced thinly
1 cup blueberries, rinsed and drained
powder sugar for dusting

DIRECTIONS:
Preheat oven to 350 degrees F.

For the Cookie Base:
In a stand mixer, add sugar (2.5 cups) and butter (14 TBS); bet on high for 2- 3 minutes or until light and fluffy. Add 2 tsp vanilla, and 2 eggs, and beat until just combined. Add flour, baking powder, and salt; mix slowly until just combined. Place dough into the fridge and let chill for at least 30 minutes.

For the Frosting:
Using a stand mixer or electric mixer; mix cream cheese, 8 TBS butter, vanilla, and powdered sugar together until completely combined- start on a slow speed to prevent the powdered sugar from going everywhere! Set aside.

Thoroughly grease a pizza pan (solid with NO holes), or use a pizza stone (don’t grease). Remove dough from fridge and place onto pizza pan. Carefully roll the dough out, then use your hands to push it into the sides of the pan, taking care to keep the dough as evenly as possible. Place into oven and cook for 16-20 minutes. Remove from oven, let cool, then place into fridge for at least 30 minutes to chill.

Spread cream cheese frosting over the top of the chilled cookie base, then arrange strawberries and blueberries on top of the frosting. Dust top with powdered sugar. Cut into wedges and serve cold/room temperature.
