Slow Cooker Chicken Queso Soup Keto Recipe

1 1/2 lbs. Boneless Skinless Chicken Breast
1 ½ Cups of Medium Hot Salsa
2 1/2 Cups of Chicken Broth
1 tsp. Salt
1 tsp. Black Pepper
½ tsp. Paprika
½ tsp. Cumin
½ tsp. Garlic Powder
1 8-oz. Package of Cream Cheese
1 8 oz. Package of Monterey Jack Block Cheese, Shredded
½ Cup. Heavy Cream


  1. Place your chicken breasts in a Large Slow Cooker
  2. Top with Salsa, Chicken Broth, Salt, Pepper, Paprika, Cumin, & Garlic Powder
  3. Cook 4-5 hours on High until Chicken is falling apart
  4. Remove Chicken from Soup and Shred with 2 forks
  5. Return Chicken to Soup, Add in Cream Cheese, Heavy Cream and ½ of Monterey Jack Cheese
  6. Cook another 30 minutes to 1 hour, stirring occasionally
  7. Serve Hot and Top with the Remaining Cheese!

You can also add in Avocado, Salsa, Cilantro and more!
