How to Boil Eggs Perfectly
INGREDIENTS:
Eggs
Large Pan
Salt
DIRECTIONS:
Cover with water 2″ over the top of the eggs
Add 1 Tbsp Salt
Slowly bring to a boil uncovered
Once boiling Turn off heat
Cover and let sit for 13 minutes exactly
Remove from hot water and place in an ice bath for 10 minutes
The trick here is the salt, the Salt is what makes the shells remove easily. Also if you cook the eggs longer or let them sit longer then it will overcook the eggs.

This was how I made my perfect hard boiled eggs (minus the salt–wish I’d known that) until I moved to the northern Andes of Ecuador. I’m at 7800 feet AND the eggs are a different “variety” than the ones I got in the States. So, I’ve been searching for a new perfect way to cook them and I found it. Of course, it requires that you have a pressure cooker, but for those who do, here it is: Put 1 c. water in the bottom of the pressure cooker. Put a vegetable steamer (or something similar) in. Add a single layer of eggs on top. Close it up and cook on low pressure for 5 minutes. Remove from heat source and let sit in the pan for another 5 minutes. Release any remaining pressure and plunge into ice water. They are perfect every time and I love how quick and easy they are. Of course if I were still in the States, I’d just be adding a little salt to the water and doing it your way. I hope someone finds this helpful.
