Cheesy Spinach Stuffed Shells Recipe
INGREDIENTS:
1 large box Jumbo shells (about 35 shells)
1 onion, finely diced*
2 pounds fresh spinach, chopped (I use the food processor)*
8 ounces mushrooms, finely diced (also use the food processor)* 15 ounces part-skim ricotta cheese
1⁄4 cup basil leaves, chopped
1 egg
1⁄2 cup bread crumbs
2⁄3 cup parmesan cheese, shredded, divided
1 TBS dried oregano
1 tsp thyme
1 tsp garlic powder
1 tsp salt
1⁄2 tsp ground black pepper
2 jars marinara sauce
DIRECTIONS:
1. Cook pasta shells according to the box (I cook the whole box, although there might be more than 30, some might tear apart while cooking); set aside
2. In a large skillet, add onion, spinach, and mushrooms; saute for 5 minutes or until heated through. Dump vegetables into a colander and using a clean kitchen towel or paper towels, press against them to squeeze out water. Set aside and let cool.
3. In a large bowl, combine ricotta, 1⁄3 cup parmesan, basil leaves, egg, bread crumbs, oregano, thyme, garlic powder, salt, and pepper. Using a fork, stir until completely mixed. Add cooled vegetable mixture to ricotta mixture and stir well to combine.
4. Heat oven to 350 degrees F.
5. Prepare 2 large baking dishes (9×13) by spraying with nonstick spray, and then add 1⁄2 cup of sauce to the bottom, spreading evenly with the back of a spoon.
6. Taking each shell, fill with a heaping spoonful of filling, squeeze to close, and set in baking dish seam side up. Repeat until all shells are filled.
7. Pour remaining sauce over the top of the shells. Sprinkle remaining cheese over the top.
8. Bake for 30-40 minutes or until the cheese is melted and shells are cooked through.
9. Cool a few minutes and serve.
**I find it fastest and easiest to add onion, spinach, and mushrooms to the food processor and just dice like that. I do it in batches and it makes everything diced finely and great for the filling.
