Crockpot Chocolate Bread Pudding Recipe
INGREDIENTS:
1 1⁄2 cups milk
4 ounces unsweetened chocolate, chopped
3 eggs
1 cup granulated sugar
1 tsp vanilla
4 cups loosely packed 1⁄4 inch cubes of stale sourdough or french bread
nonstick spray
whipped cream or ice cream for topping
DIRECTIONS:
Place chocolate and milk into a large glass bowl. Place into microwave and heat on high for about 6 minutes, stirring after every 2 minutes. Continue until the chocolate is melted. Whisk in eggs, sugar, and vanilla; completely combine. Pour in bread cubes, and stir carefully to coat.
Spray a 2 1⁄2 – 3 quart soufflé dish or oven safe bowl/dish that fits in your slow cooker with nonstick spray. Pour bread mixture into the bowl/dish; place dish/bowl into the slow cooker. Fill slow cooker with about 4 cups (the amount of water will differ depending on size of slow cooker and dish used – you want the water to be halfway up the dish that the mixture is in) of water.
Cover with lid, cook on high for 2 1⁄2 hours** Remove lid and cook for 30 more minutes. Turn heat off, allow to cool at least 30 minutes. Remove and serve topped with whipped cream or ice cream. Enjoy!
**Do not cook on a lower heat setting for a longer time. The temperature needs to be high, for 2 1⁄2 hours.
Notes: Store leftovers in fridge.
