This Easter Popcorn Eggs Recipe is even better than the Popcorn Balls your grandma made! When I was a kid my grandma always made popcorn balls at Christmastime. I remember going to her house and she’d pop popcorn on the stove and we’d mix the corn syrup and food coloring on the stove until it was ready. Then we’d pour the hot syrup on the popcorn and mix it up. My favorite part was shaping the balls. We lathered our hands in butter and grab a handful of popcorn and {{{S-Q-U-E-E-Z-E-D}}} it together to make a ball.
I enjoyed making popcorn balls very much, but I didn’t enjoy eating them. It was a lot of work! That corn syrup hardened and it felt like you were trying to bite into a baseball! I’d eat a few bites and pass it to my dad to finish.
These Easter popcorn eggs are a new spin on my grandma’s classic recipe. The marshmallows make the shaping just like the corn syrup version, but the eggs don’t get rock hard like traditional popcorn balls. These Easter popcorn eggs are soft and chewy.

Ingredients
These Ingredients make 4 different colors of eggs
- 16 cups popped popcorn
- 8 cups mini marshmallows (at least 2, 10 oz bags)
- 1 stick butter
- Neon Food Coloring
Instructions
For Each Color Egg
- Place 2 tablespoons butter and 2 cups mini marshmallows in a large microwave-safe bowl. Microwave for 45 seconds.
- Remove from microwave and add food coloring (about 6 drops) and stir until butter is melted.
- Stir in 4 cups popcorn and mix well so all popcorn is coated. Let set for 60 seconds to cool a bit.
- Spray your hands with cooking spray and shape a handful of popcorn into an egg shape. The eggs are about the size of a plastic Easter egg. Use firm pressure when pressing together to create a smoother egg surface.
- Repeat until you have all your egg colors.
