It only takes a few minutes to assemble this Homemade Ice Cream Cake and it’s a fun way to celebrate birthdays, the 4th of July and more!
What Do You Need to Make an Ice Cream Sandwich Cake?
To make an Ice Cream Sandwich Cake you only need 5 simple ingredients:
- Ice Cream Sandwiches
- Cool Whip
- Chocolate Syrup
- Caramel Syrup
- Mini M&M’s or Sprinkles
You can change up these ingredients all you want to create your own custom ice cream cakes at home! I think adding in Andes Mints for a Mint Chocolate Chip Flavor, or Reese’s Peanut Butter Cups with Chocolate and Peanut Butter Drizzled would be amazing!
How to Make an Ice Cream Sandwich Cake
To make an Ice Cream Sandwich Cake start by unwrapping 24 Ice Cream Sandwiches. I did this as I assembled my cake so that they weren’t sitting around melting somewhere.
Next I started by lining a 9×13 Cake Pan with Parchment Paper, but you can also use aluminum foil if you want! Whatever you have on hand should work just fine, you just don’t want the bottom layer of the Ice Cream Sandwiches to stick.
Note: I did have to cut one Ice Cream Sandwich in half to get the bottom layer flat! It should fit perfectly, but it’s good to know in advance so you aren’t stressing when you have a weird space left at the end.
After you get your first layer of Ice Cream Sandwiches in your pan, put half your cool whip on top and spread it evenly. Top with Caramel and Chocolate Syrup! Then repeat the layers again. I finished mine off with Mini M&M’s but you can also use any type of sprinkles that you have or chocolate chips!
Homemade Ice Cream Cake Recipe

- 24 Ice Cream Sandwiches
- 16 oz. Container of Cool Whip
- 8 oz. Hershey's Chocolate Syrup
- 8 oz. Caramel Sauce
- 1 Cup Mini M&M's
- Line a 9x13 Cake Pan with Parchment Paper
- Place 12 Unwrapped Ice Cream Sandwiches in the bottom of the Cake Pan
- Spread 1/2 of the Cool Whip over the first layer of Ice Cream Sandwiches
- Drizzle with Chocolate Syrup and Caramel
- Repeat steps 2-4 again adding another layer of Ice Cream Sandwiches, Cool Whip and Chocolate and Caramel Drizzle.
- Sprinkle with Mini M&M's or your favorite sprinkles
- Place in the freezer for a minimum of 2 hours to harden
- Serve immediately out of the freezer!
