Baked Buffalo Chicken Strips Recipe
INGREDIENTS:
1 pound boneless skinless chicken tenders
1⁄2 cup egg whites
2 TBS + 1⁄3 cup Buffalo Wing Sauce, divided
1 cup fiber one cereal, processed into a fine breadcrumb texture (I use my food processor) 2 tsp garlic powder
2 tsp onion powder
1 tsp paprika
1⁄4 tsp salt
1⁄2 tsp black pepper
extra buffalo sauce, ranch, or bleu cheese for dipping
Serves 4 (2 strips servings)
DIRECTIONS:
In a shallow bowl combine 2 TBS wing sauce and egg white.
In a separate shallow bowl combine fiber one crumbs, garlic powder, onion powder, paprika, salt, and pepper (just use a whisk or fork).
Heat oven to 400 degrees F.
Place a cooling rack*(see note) on top of a large baking sheet. Spray rack/sheet with nonstick spray.
Taking a piece of chicken, dip it into the egg/sauce mixture, then dip into the crumb mixture; evenly coat. P
lace strip onto rack on baking sheet. Repeat for all chicken strips.
Using remaining 1⁄3 cup of wing sauce, dip basting brush in it and then brush sauce onto tops of chicken strips.
Repeat until all strips are coated with sauce.
Place on the middle rack of oven; cook for 18-20 minutes or until chicken is cooked through.
Serve immediately with your favorite dipping sauce!
*By cooking the strips on a rack on top of the baking sheet, this allows the bottoms of the strips to crisp up as well. If you place them directly on the baking sheet, the bottoms will not be crispy, however, cooking them that way is still a great option if you don’t have a cooling rack to use.
