I’m always looking for new recipes for Cinco de Mayo and this Lazy Enchilada Casserole is perfect because everyone in my family likes it, AND it’s easy to make! You layer frozen taquitos with the other ingredients and when it all bakes together, it is SO delicious!
How to Make Lazy Enchilada Casserole
My kids have actually helped me put this together. There’s something so satisfying about laying out all the frozen taquitos, as least they think so! Ha!
Ingredients for Lazy Enchilada Casserole
- Frozen taquitos
- Enchilada sauce
- Refried beans
- Shredded cheese
- Sour cream, cilantro, and tomatoes, if desired – I like layering these items on top when serving, but you surely don’t have to!
Instructions for Frozen Taquito Casserole
Preheat oven to 400° F and grease a 9×13 baking dish. Spoon the refried beans into the bottom of the baking dish and spread them out evenly with a spatula or a large spoon
Place the frozen taquitos in a single layer over the refried beans. Cover as much surface area of the refried beans as you can.
Pour the enchilada sauce over the top of the taquitos and bake for 20 minutes.
Remove the dish from the oven and sprinkle with shredded cheese.
Bake for an additional 5 minutes, or until the cheese is melted.
Top with cilantro, sour cream, tomatoes, or any toppings your family likes best.
