Ingredients for Easy Mexican Coleslaw
- Mayonnaise
- Sour cream
- Lime juice, fresh
- Taco seasoning
- Tri-color coleslaw mix
- Red pepper, fresh
- Grape tomatoes halved
- Black beans, drained and rinsed
- Del Monte Fire-Roasted Corn, canned – This is the exact corn I used. It was nice that I didn’t have to make it myself!
- Jalapeno, seeded and minced
- Cilantro, fresh and chopped
- Pepper, if desired
Instructions for Easy Mexican Coleslaw
In a small bowl, stir together sour cream, sour cream, lime juice, and taco seasoning. Set aside.
In a large serving bowl, combine coleslaw, red pepper, black beans, grape tomatoes, corn, jalapeno, and cilantro.
Gently stir in the mayo/sour cream mixture. Season with fresh ground black pepper to taste.
Serve immediately. May be stored covered in the refrigerator for up to a week.

- 1 cup mayonnaise
- 2/3 cup sour cream
- 4 tablespoons lime juice
- 2 tablespoons taco seasoning
- 1 bag (16 ounce) tri-color coleslaw mix
- 1 diced red pepper
- 1 1/2 cup grape tomatoes halved
- 1 can (15.25) ounce black beans drained and rinsed
- 1 can (14.75) ounce Del Monte Fire Roasted Corn
- 1 jalapeno, seeded and minced
- 1/2 cup chopped fresh cilantro
- Fresh ground black pepper
