I love bringing this BLT Cauliflower Salad to all of the summer backyard parties! It’s so easy to throw together and I can bake the cauliflower while I’m cutting up the other ingredients. It’s my go-to side when I’m not sure what to make because literally everyone, even my kids, loves it!

First of all, you’ll have to preheat the oven to 350 degrees. While your oven is preheating, you’ll start cutting up all of your veggies for the BLT Cauliflower Salad. Now, we both know that cauliflower is extremely crunchy, so I really prefer to drizzle it with olive oil and bake it for 20 minutes to soften it up before putting it into the salad. While it’s baking, cut up the rest of your veggies and bacon.
You’ll want to cut up your spinach, tomatoes, onions, avocado, and bacon. After you finish that, combine it all in a large salad bowl. There’s no need to use a separate mixing bowl for the BLT Cauliflower Salad; you can mix it in what you’ll be serving it out of! (Who doesn’t love one less dish to wash, right?)
Next, you’ll add your ranch dressing and stir the BLT Cauliflower Salad all together. You can refrigerate this for a few hours before serving, but you don’t have to! This will keep in the fridge for up to four days. I think after that, the spinach would wilt too much.

- 1 large head of cauliflower
- 1 tbsp olive oil
- 5 strips cooked bacon, chopped
- 1/2 cup shredded spinach
- 1 avocado, chopped
- 1 pint cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- 1/2 cup ranch dressing
Preheat oven to 350 degrees. While the oven is preheating, cut cauliflower into bite-sized florets and place them on a cookie sheet lined with foil and sprayed with baking spray.
Drizzle with olive oil and bake for 20 minutes.
While the cauliflower is baking, cut up all other ingredients and place in a large mixing bowl.
When cauliflower is cool, add to other salad ingredients and add ranch dressing.
Stir to combine. You can either refrigerate before serving or serve right away.
