Healthy Cauliflower Soup Recipe
INGREDIENTS:
1 head of cauliflower, cut in to small pieces 2 cup vegetable or chicken broth
32 ounces no salt added crushed tomatoes 2 tsp cumin
1⁄2 tsp salt
1⁄2 tsp black pepper
2 TBS curry powder
1⁄2 cup heavy cream or whole milk
DIRECTIONS:
In a slow cooker, place cauliflower in the bottom. Add broth, tomatoes, cumin, salt, and pepper. Stir once to combine. Cover and cook on high for 4 hours, or low for 7 hours.
With a potato masher or immersion blender** mash/puree cauliflower chunks. Add curry powder and cream; whisk until well combined.
Cover and cook on high for 15-30 minutes. Serve.
**for a chunkier soup (as pictured), use a potato masher to mash the cauliflower. For a smooth consistency, use an immersion blender to puree the cauliflower.
