I’m loving this Easy Grilled Chicken Burritos Recipe for dinner! This is a great Easy Dinner Recipe to add to your meal plan. Grilled Chicken Burritos Recipe
INGREDIENTS:
4 large flour tortillas (10 inches)
1 TBS olive oil
1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 yellow onion, diced
1 tsp chili powder
1 tsp cumin
1 – 15oz can black beans, drained and rinsed
1 cup cooked brown rice
1 cup shredded Colby jack cheese
Cooking spray
Salsa, sour cream, guacamole for topping (optional)
Makes 4 burritos
DIRECTIONS:
- In a large skillet, add olive oil, and onions. Saute for 2 minutes over medium-high heat, stirring frequently. Add chicken pieces, chili powder, and cumin. Continue cooking 5-7 minutes, or until chicken is cooked through. Stir frequently. Add black beans and cook for 2 more minutes, stirring frequently. Remove from heat. Stir in cooked brown rice.
- Lay out your tortillas, and place 1⁄4 cup cheese in the center. Add 1⁄4 of the chicken mixture on top of the cheese. Fold up the burrito (I fold in the sided, and then roll shut to prevent the filling from falling out).
- Using a separate skillet or grill pan, spray with cooking spray, heat over medium heat, and add the burritos (as many as you can fit), seam side down. Cook for 2 minutes or so- until lightly browned. Flip over and cook 1-2 more minutes, until lightly browned. Repeat until all the burritos are cooked.
- Cut in half and serve with optional toppings!
