Healthy Turkey Chili Recipe
INGREDIENTS:
1 TBS olive oil
1 lb lean ground turkey
1 red onion, diced
1 green pepper, chopped
1 red pepper, chopped
2 tsp chili powder
1⁄2 tsp cracked black pepper
1⁄4 tsp salt
1 28oz can diced tomatoes (with juice)
1 – 15 ounce can black beans, drained and rinsed
1 – 15 oz can white beans, drained and rinsed
1 TBS brown sugar
1 TBS hot sauce, such as Tapatio
green onions for garnish (optional)
sour cream or plain Greek yogurt for topping (optional) Colby Jack cheese, grated, for topping (optional)
DIRECTIONS:
In a large heavy-bottom stockpot, heat olive oil over medium heat. Add onions and peppers; saute until tender, about 5-6 minutes.
Add chili powder, salt, and pepper; stir. Saute for 1 more minute.
Add ground turkey, and stir occasionally until it is completely cooked through, about 10
minutes. Using a wooden spatula or spoon, break up chunks of turkey and mix.
Add tomatoes with juice and beans; stir to combine. Add hot sauce and brown sugar; stir to combine.
Simmer on low heat for 20 minutes.
Serve in bowls topped with cheese, sour cream (or greek yogurt), and green onions.
