There is just something about a meal when you can cook it all in one pot, AND You can get it ready in under 20-30 minutes! Dinner time has been changed in our house since the instant pot, and I’m not complaining!
This recipe is one of my kids’ favorites when it comes to Instant Pot Dinners! Plus, if you are looking for an easy side dish, you could always skip the chicken and just make a broccoli rice casserole! A quick, last minute option that would be a great addition to any meal!
Instant Pot Chicken Broccoli Rice Recipe
INGREDIENTS:
2 TBSP unsalted butter
2 lbs chicken breast (boneless/skinless/ cubed)
1 Tsp salt
3/4 tsp pepper
1 1/3 C long grain rice
1-2 C fresh broccoli cooked
3 Cans of cream of chicken soup (10 oz)
1 Can of water (Reuse a cream of chicken soup can)
DIRECTIONS:
Turn Instant Pot to saute.
Add butter.
Heat until hot.
When hot, add chicken
Cook chicken until cooked and browned
Add rice, cream of chicken soup and water
Stir well.
Cook on manual high pressure for 5-8 minutes
When the timer is up, perform a quick release.
Stir until it is well combined.
Add broccoli
Stir until well combined.
Spoon into bowls.
Serve immediately.

Unfortunately this recipe didn’t work at all, and I was unable to salvage it. As a single mom in grad school, I was incredibly disappointed to waste so much food on a bad recipe. I should have read the other reviews first and run the other way.
Burn notice! After 1 min. Don’t know what went wrong. It’s sounds like I’m not the only one. There goes dinner down the drain.
My attempt at this kind’ve fell apart at the part where you cook the rice and soup with the chicken. So after adding everything and stirring, I set my Instant Pot for Manual for 7 minutes. After the timer went off, I turned the knob to Release…and discovered it never pressurized! After trying a few things, I found that a layer of rice had scorched to the bottom. So I dumped it into a pot, scraped the Instant Pot, added it back and set it to 6 minutes Manual. It got a little bit of pressure, but not much, and found another layer of rice scorched to the bottom. Scraped again, added water, and set it to 12 minutes. No pressure, but I let it complete and just finished off the recipe at this point. It tasted great…but some of the rice was really undercooked.
Was the rice supposed to be pre-cooked? That is the only thing I can see that I might have done wrong. I’ll keep trying to experiment with this one, as the taste was WONDERFUL. Just need to find a way to make sure the rice cooks right.
Made this last night: followed directions exactly, but the “burn” indicator came on after 2 minutes: the rice was stuck to the bottom of the pot! Ended up finishing it on stovetop : what could have caused this?
Is there a way to make this recipe with a long grain brown rice? I tried making this with brown rice but keep getting the “burn” warning :(
Burn warrning kept coming on.
I had a bad experience with this one as the directions weren’t very clear. It doesn’t state when to use the salt and pepper, so I assume you’re supposed to season the chicken? Also, no matter what I tried, all this did recipe did was burn. I’m pretty new to this pot but I looked a few things up and tried cleaning it out and adding water to the bottom first, then pouring the mixture in on top of that. Same result. Just a lot of burn.. I’m not sure what I did wrong.
