Can You Freeze Leftover Tomato Soup
I have not tried freezing this soup because the heavy whipping cream will more than likely cause it to separate and curdle a bit once it thaws from being frozen. You will find a lot of dairy items will not freeze and thaw well. So if you try, know that the texture could change quite a bit.
- 1/3 cup olive oil
- 1 Large Yellow Onion
- 3 medium carrots, peeled and chopped
- 1 TBSP Dried Basil
- 3 28 oz. Cans Pureed Tomatoes
- 1 cup chicken broth
- 1 ½ cups heavy whipping cream
- 1 tsp salt
- 1 tsp pepper
- Fresh basil, for garnish
- Pour olive oil into instant pot bowl and sauté. Let the oil heat up
for about 30 seconds, and then add diced onions, diced carrots and

tomatoes, chicken broth, and heavy cream. Mix well, scraping bottom.
- Lock the lid and set the timer for 5 minutes, using the manual
setting. After cooking, allow the pressure to naturally release.
(Never try to force the lid off! When it’s ready to be opened, the
lid will come off easily.) Add salt and pepper.
- Next, blend until smooth with the immersion blender until smooth.
Serve with fresh basil as a garnish, if desired.
