Ingredients You Will Need
Breakfast Sausage – You can use any brand you like. It is the stand out flavor so make sure it is a sausage you like.
Almond Flour – I recommend making sure you get finely ground almond flour. Otherwise it can alter the texture of the sausage bites.
Cheese – You can use cheddar shredded cheese or opt for a different variety of cheese.
Cream Cheese – This adds a nice richness to the balls.
Baking Powder – Make sure your baking powder is active and not expired for this.
Can I Use Coconut Flour Instead of Almond Flour?
I find almond flour gives a better blend with the sausage, but you are more than welcome to use coconut flour or any flour alternative you want for a keto friendly recipe.
Now, if you are not keto, go right ahead and reach for a classic all purpose flour or even Bisquick to replace the almond flour.
How To Make Keto Sausage and Cheese Bites
Grease your baking dish, and then preheat the oven. The full measurements of ingredients and directions are in the printable recipe card at the bottom of the post. This is a walk through on how to make these keto sausage bites.
Next, in a bowl add your ground sausage, cream cheese, shredded cheese, baking powder, and almond flour. Mix well. I find that using your hands helps to ensure the ingredients incorporate well. Or the paddle tool on a KitchenAid mixer.
Next, you will roll your sausage into balls, and place on your baking sheet. Leave space between each ball.
Storing Leftovers
Refrigerate – You will want to refrigerate any of these keto cheesy sausage bites in an airtight container. They will store for 2-3 days in the fridge. Then reheat or eat them chilled.
Freezing – If you want to store some in the freezer go right ahead. Place in a freezer bag or airtight freezer friendly container and freeze for 3-4 months. Then thaw in the fridge overnight to reheat. Or toss in the oven straight from being frozen.

- 1 pound breakfast sausage

Instructions
- Preheat oven to 375 degrees. Combine all of the ingredients in a medium mixing bowl and mix with a hand mixer on low until well combined.
- Lightly spray a large baking sheet or line with parchment paper.
- Using a cookie scoop to portion out the sausage balls, roll with your hands to get the proper shape.
- You should have approximately 25 sausage balls, depending on the size you roll them. Bake 20-25 minutes.
