Mixed Berry Crumble on the Grill Recipe
INGREDIENTS:
2 cups mixed berries (blueberries, raspberries, strawberries) 2 TBS butter, softened
1 tsp sugar + 4 TBS sugar
1 tsp cinnamon
1⁄4 tsp salt
2 tsp cornstarch
1 1⁄3 cups granola
non stick spray
vanilla ice cream, optional
DIRECTIONS:
Place berries in a medium sized bowl. Add 4 TBS sugar and 2 tsp cornstarch; toss to coat berries; set aside.
In a small bowl, add butter, 1 tsp sugar, cinnamon, and salt. Mix with fork until completely combined.
Spray 4 sheets of heavy duty foil (at least 12 inches long), in the center with non stick spray. Place 1⁄2 cup of the berries into the center of each foil. Add cup granola on top of the berries (repeat for each pack), then 1⁄4 of the butter mixture, dotted on top of the granola. Bring long sides of foil together, and fold over twice. Roll the sides to seal, but do not press flat- leave room around the inside of the packet so steam can circulate.
Over medium heat on the grill, place packs on the grill, close the cover and cook for 10 minutes. Berries should burst and sauce should be thick.
Serve with vanilla ice cream or whipped cream if desired.
