Why This Pecan Crusted Chicken Is So Popular
Baked Not Fried – A baked chicken that offers that crispy coating you would get when deep fried. This is a healthier version that doesn’t have all the excess oil. But, just as tasty!
Simple Ingredients – Need to throw a dish together? This recipe fits the bill as it uses simple everyday ingredients. You might even have all or most items on hand.
Hands Off Cooking – Toss in the oven and forget it till it is done. You can tackle chores, help kids with homework and more.
Ingredients Needed
Chicken – I used a boneless chicken for this recipe. If you were wanting to use bone-in, the recipe works you just need to cook the chicken longer.
Pecans – Finely grind your pecans for the perfect nutty and crunchy coating for this chicken.
Breadcrumbs – The breadcrumbs work with the pecans for added texture and of course flavor to the chicken dish.
Seasonings – Salt, pepper, and basil are what I used to help elevate the flavor of the chicken a bit more. Feel free to adjust with other spices if you would like.
Olive oil – Helps prevent the chicken from sticking to your pan.
Honey Mustard – Adds a nice sweet and savory component to the chicken.
How to Make
The full directions for this dish are in the printable recipe card featured below.
Start by preheating your oven and then work on crushing up pecans and mixing with breadcrumbs. Add in the seasonings and stir well.
Then dredge each chicken breast in the mustard, and coat in the breadcrumb mixture.
Place chicken in a single layer and drizzle with oil and bake as directed.
Once done pair with any of your favorites, and serve and enjoy!
How to Know When Chicken Is Done
The juice will run clear out of the chicken, and it needs to read an internal temperature of 165 degrees F. You can buy a meat thermometer online.
If you are using bone-in chicken make sure to not touch the bone when you are checking the temperature. The bone will read a higher temperature than the meat.
Storing Leftovers
The chicken is great leftover! Slice and top salads, or use for grab and go lunches or reheat for a simple dinner. The chicken will last for around 3 days in the fridge.
