Spicy Sweet Potato Casserole Recipe
INGREDIENTS:
5 strips bacon, sliced into thin pieces
1 TBS olive oil
1 lb boneless, skinless chicken breast, cut into bite size pieces 2 medium sweet potatoes, cut into bite size pieces
2 tsp paprika
2 tsp garlic powder
1 tsp onion powder
3 TBS sriracha or other chili paste
1⁄4 tsp salt
1⁄8 tsp cracked black pepper
3 green onions, chopped
DIRECTIONS:
In a large bowl, add chicken pieces, sweet potatoes, paprika, garlic powder, onion powder, salt, pepper, and sriracha. Using hands or spatula, toss until evenly coated; set aside.
Preheat oven to 400 degrees F. In a large skillet over medium high heat, add olive oil and bacon slices. Cook for 5-6 minutes, stirring frequently, until browned. Place bacon on a paper towel lined plate and set aside.
In the same skillet, add chicken mixture and cook over medium/high heat for 5-6 minutes, or until chicken is browned a bit. Stir frequently.
Place skillet in oven (if it is not ovenproof, wrap foil around the handle), and bake for 20 minutes; stir, continue baking 10 more minutes, or until chicken is cooked through and potatoes are tender. Do not over cook.
Remove from oven, sprinkle bacon pieces, and green onions over the top; serve immediately.
