Super No Bake Granola Recipe
Dry: Feel free to adjust the amounts of the items below, in the end make sure you have 4 and 1/3 cups of dry ingredients (plus salt).
2 ¼ cups old fashion oats
½ cup grape nut cereal
½ cup raw pumpkin seeds
¼ cup amaranth
¼ cup sunflower seeds
¼ cup hemp hearts
¼ cup chia seeds
¾ teaspoon salt
Liquid & Sugar
1 teaspoon vanilla
4 tablespoons pure maple syrup
3 tablespoons butter
1/3 cup brown sugar
Prep a bread pan with wax paper.
Measure out your dry goods (save the brown sugar for the next step with liquids) into a large mixing bowl, stir thoroughly with a whisk.
In a medium sauce pan slowly melt your butter and then add the vanilla, maple syrup and brown sugar. Combine and bring to a very light simmer. Cook roughly 3 minutes watch closely to ensure it does not over heat and burn. When ready, pour this liquid over the dry ingredients and mix thoroughly. You may use your electric mixer, we used a rubber spatula and it came together very quickly.
When combined press the mixture into the lined bread pan. You will want to press firmly so all of the tiny delicious bits stick together in little clusters. Cover and chill for at least one hour before enjoying. You may chop off pieces of the granola or break of chunks of it. Store in an airtight container in the refrigerator for up to 2 weeks.
Eat this by itself, or add some milk to create your own cereal! This is a healthy snack and breakfast option for you and your family!
