Thin Mint Copycat Recipe

Ingredients
- ½ Cup Butter
- ½ Cup Powdered Sugar
- ½ Cup Cocoa
- 1 tsp. Vanilla
- ½ tsp. Salt
- 2/3 C. Flour
- 2 Tbsp. Cornstarch
- 8 oz. Chocolate Almond Bark
- 1 ½ tsp. Mint Extract
Instructions
- Combine Butter, Sugar, Cocoa, Vanilla, Salt, Flour & Cornstarch in a bowl and mix well.
- Press dough together with your hands until it sticks together
- Knead gently until it forms a ball and flatten slightly before placing in the freezer
- Place Dough in Freezer for about 15 minutes to harden
- Roll dough out to a ¼” Thickness
- Cut circles out of dough and place on a greased cookie sheet
- Bake cookies for 10 Minutes
- Allow cookies to cool
- Melt Chocolate Almond Bark in a double broiler or Wilton Chocolate Melter
- Stir in Mint Extract
- Dip cookies in chocolate mixture and place on a cookie rack or wax paper to cool

I used a Wilton Chocolate Melter to melt my Chocolate Almond Bark! This is an easy way to dip anything because it keeps your chocolate melted while you are working with it! Plus it gives the chocolate an even consistency.

I guess no one else has attempted to make this recipe because it’s really off. First of all, it only made about 12 cookies, so I believe the recipe has been halved. There is no temperature listed (I did 350 which worked out fine), and it also says to roll out dough 1/4″ thick…. which doesn’t make sense… I rolled out the dough about 2″ thick & CUT it in 1/4″ slices. And the real puzzle is why it lists almond bark as the the chocolate coating… I went ahead and made it that way, and it wasn’t very good–doesn’t go with the mint really, and is not a true thin mint copycat. The cookie also turned out more like shortbread, which wasn’t bad, but again, not like a true thin mint. This recipe needs to be rewritten! I’d give it 2 stars as is, maybe 4 stars if it was re-written with all the corrections….
