I’m always looking for new and unique dinner recipes for my family, so this Asian Citrus Chicken Recipe is a great recipe if you want to try something a little bit different. Asian Citrus Chicken Recipe
INGREDIENTS:
1 pound boneless, skinless chicken breast, cut into bite-sized pieces 4 egg whites
1⁄2 cup + 1 TBS cornstarch, divided
salt
pepper
1 TBS olive oil
4 cups fresh spinach leaves, chopped
4 cloves garlic, minced
4 green onions, chopped
4 clementines/cuties/small tangerines, pieces cut in half 2 cups pineapple, diced (can or fresh works)
2 tsp rice wine vinegar
4 TBS soy sauce
4 TBS honey
2 TBS water
4 tsp sesame seeds
DIRECTIONS:
- In a medium-sized bowl combine egg whites and 1⁄2 cup cornstarch. Whisk until completely mixed. Place chicken pieces into the mixtures and toss to coat chicken. Set aside for 5 minutes.
- In a large skillet, heat 1 TBS olive oil. Add about half of the chicken, and cook on both sides, about 6 minutes total (or until cooked through). Do not overcrowd the chicken or they will stick together. Remove from skillet and set on a paper towel-lined plate. Continue cooking the chicken, adding oil as needed, until all the chicken is cooked. Set aside on a plate.
- In a medium bowl, whisk together rice wine vinegar, soy sauce, and honey. In a separate small bowl, whisk 1 TBS cornstarch with 2 TBS water. Add cornstarch/water mixture to the other sauce mixture; whisk to combine.
- In the skillet, add clementines, pineapples, green onions, garlic, and spinach. Stir fry until the spinach leaves are wilted, about 4 minutes. Add chicken back to skillet.
- Over medium/high heat, pour the sauce into the skillet and allow to come up to a boil. Stir frequently to coat chicken mixture and let simmer for 1-2 minutes or until the sauce has thickened. Remove from heat, top with sesame seeds, and serve immediately.
Serve over rice, in lettuce wraps, over quinoa, or by itself. Enjoy! Serves 4-5.
