Breakfast options that can be made ahead of time and kept frozen for when the time arrives are probably the thing I love the most to cook, and this Brown Sugar Pecan Waffles Recipe is just it! They are super easy to throw together and cook, and they freeze beautifully, so you can keep a stock of homemade waffles for when you are in a hurry (which let’s be honest happens a lot of times during the week).
But not only they are easy and fast and busy day approved, but they are also delicious and warm and in my opinion comfort food at it’s finest. You get all the brown sugar slightly caramel flavor and then get the pecan crunchiness all together into one big waffle. Overall, it’s like taking a taste of fall.
While I could spend days and days talking about how delicious they are, I’m going to save you the time, you are going to discover it anyways when making it, so I’m going to jump straight to the freezing part, because you get all the convenience from frozen foods and all the great taste and texture from homemade treats.
I also find that freezing waffles is especially handy since they are not only a great breakfast, but they are also incredibly delicious as dinner! Actually, if you asked my family I’m pretty sure they would ask for Brown Sugar Pecan Waffles for every meal.
To freeze them just let them cool completely on a rack, then tightly wrap them and place into an airtight container for up to 6 months. Once you are ready to serve them pop them in the microwave or over the stove for a couple of minutes (actually, 2 minutes tops) and you are all set for a home cooked meal in no time.
