Candied Sweet Potatoes Recipe
INGREDIENTS:
4 cups sweet potatoes, cubed
1/2 cup granulated sugar
2 eggs beaten
1/2 tsp salt
4 tablespoons of unsalted butter softened + 3 tablespoons set aside
1/2 tsp vanilla
1/2 cup of milk
1/2 cup packed light brown sugar
1/2 cup chopped pecans
1/3 cup flour
1 1/2 cup mini marshmallows
DIRECTIONS:
- Preheat oven to 325 Degrees.
- Place cubed potatoes in a saucepan full of water. Cover and cook until tender. Drain and set aside.
- In a large bowl, mix the sweet potatoes, sugar, eggs, salt, 4 tablespoons of butter, milk, and vanilla extract.
- Place in a baking dish.
- In another bowl cut the remaining butter and mix with the pecans, brown sugar, and flour.
- Sprinkle over baking dish.
- Sprinkle Marshmallows over the entire dish.
- Bake in the oven at 325 degrees for 30 minutes.
