Wow! Can you just say Delicious? There’s nothing like mixing Caramel and Pumpkin for an awesome Fall Recipe. And while I love this Caramel Brownie Pumpkin Trifle Recipe in a Mason Jar, think of all the ways you could serve this, you could do individual cupcakes or small mason jars, or do one Larger Trifle to take to a Fall party! The ideas are really limitless.
Delicious, decadent and perfect to finish off a hearty fall dinner. Rich chocolate brownies, topped by a sweet, light cool whip and a spiced pumpkin pudding mixture are enough to have your taste buds snapping to attention, add a drizzle of caramel and they will be pushed right over the edge of flavor. Pretty to look at and even better to eat this dessert will get you invited to all the Fall parties!
Ingredients:
1-15 oz. can of pumpkin
¾ cup packed brown sugar
1 – 4.2 oz. box vanilla pudding mix
1/3 cup half and half (milk will do as well)
2 tsps. Pumpkin pie spice
¼ cup chopped walnuts
Your favorite boxed brownie mix
1 oz. tub of cool whip
12 caramels
Oil
Water
Makes 4 quart Mason jars full.
Directions:
Set out Cool Whip to thaw if it has been in the freezer, stir to fluff. Chop Walnuts and set aside until you are ready to layer.
Cook boxed brownies according to package directions (I am quite addicted to the Ghiradelli brand), allow to cool, flip them over onto a cutting board and slice into bite pieces.
Combine; pumpkin puree, brown sugar, pudding, and milk in a medium-sized bowl.
When you are ready to begin assembling- melt caramels in a glass bowl in the microwave 15 seconds at a time, watch closely they burn easily. During assembly, you may have to reheat caramels a bit to keep it liquefied.
Assemble trifles by alternating pumpkin mixture, brownie, cool whip, and a drizzle of caramel. End with a dollop of cool whip, a sprinkle of chopped walnuts, and a final drizzle of caramel.
You could also make this in a large trifle bowl to bring to a party, or to make individual servings a different way would be to serve them in a pretty wineglass. My family loves a milk chocolate brownie. But, my favorite is to make it prepared with dark chocolate, and dark chocolate is good for you, right?
