I have one of my family’s Favorite Freezer Meals to share with you today! This Cheesy Broccoli Chicken & Rice Recipe is the perfect Freezer Meal Idea!
You can make up several all at once – bake one and freeze the extras for a busy night! Even if you’re not into Freezer Cooking on a monthly basis this is a Great Recipe to have on hand! It’s sooooo easy to make and the entire family loves it!

The first thing you need to do is cook the Broccoli, Chicken, and Rice. I cook my Chicken and Rice both in the oven so I can put them in pans and walk away.
To Cook Chicken in the oven:
Place frozen chicken breasts in a 9×13 pan and bake on 350 for around an hour. I lightly salt and pepper the chicken breast before I bake them. Once they are done just remove from the oven and allow to cool, these are completely cooked and should be ready to dice and use in recipes!
To Cook Rice in the oven:
Place your Rice and Water (1 cup rice for every 2 cups of water = 2 cups of Cooked Rice) in an Oven Safe Dish with a lid. Cover and bake on 350 for around an hour and 15 minutes. Stir and let the rice sit covered on a counter for about 20 min to finish absorbing any water. Fluff with a fork and you’re ready to use this in your dish.
I use Broccoli frozen from Sam’s that comes in steamer bags so I lightly steam mine for about 5 min each before mixing everything together
Combine the Broccoli, Chicken, Cheese, Rice, Cream of Chicken Soup, and Salt and Pepper in a bowl and mix completely.
At this point you’re ready to bake, You can place this in a 9×13 Casserole Dish, or in a Freezer Bag. I like to make multiple recipes and then bake one that night for dinner and freeze the rest. For me, it’s not much harder to make 4 of the same meal than it is to make 1. You are already getting the dishes dirty and taking the time to cook the chicken so it’s really a good idea to cook in batches! By making 4 of the same recipe and freezing 3 for later nights I can keep my freezer stocked with Freezer Meals without ever having to spend an entire day cooking!
You could freeze this recipe in Freezer Bags or in 9×13 Aluminum Foil Pans. If I’m taking the freezer meals to a meal swap or to a Family that just had a baby then I like to use foil pans, but if I’m going to be using them at home I have found the Freezer Bags store nicely in my freezer so I prefer these personally.
When you remove the Cheesy Broccoli Chicken & Rice Freezer Meal from the freezer, let it thaw completely. If I set it out in the morning, it’s normally thawed by 5 pm. Place the contents in a Casserole Dish and bake at 350 Degrees for about 30 minutes. You can top with additional cheese if you would like but it’s not necessary.

Ingredients
- 8 Cups of Cooked Rice (4 Cups of Uncooked Rice & 8 Cups of Water)
- 8 Cups of Cooked & Diced Chicken Breast
- 4 -10.5 oz. Cans of Cream of Chicken or Mushroom Soup (I like 2 of each)
- 4 Bags of Broccoli Fleurette Pieces Steamed
- 2 Tbsp. Onion Flakes
- 8 Cups of Cheese
- 3 Cups of Milk
- Salt and Pepper to Taste
Instructions
- Pre-Cook the Broccoli, Chicken, and Rice (Directions in the post)
- Combine the Cooked Rice, Chicken Broccoli, Cream of Chicken Soup, Onion Flakes, Cheese and Milk in a Large Bowl (You may need to work in 2 batches if you don't have a large bowl)
- Salt and Pepper lightly to taste.
- Divide mixture into 4 Casserole Dishes or Large Freezer Bags and Freeze
- Thaw and Bake for 30 Minutes on 350 Degrees
- (Optional: You may add additional cheese before baking if desired)

Hello, I have seen freezer meals using chicken and it was uncooked, can I use uncooked chicken and keep the broccoli frozen?? I really don’t want to take the time to cook the chicken? Thanks so much

How long can you leave these in the freezer for? I’m new to freezer meals.
Freezer guidelines vary for different ingredients. Normally the quality of the item just goes down the longer it’s left in the freezer. The answer varies between 1 month and 12 months depending on what you’re freezing. IF you always use the oldest freezer meals first you should be okay in this department ;) Hopefully you’re using them up quickly if you keep making them.
This was delicious and made such a huge helping! We’ve eaten 2 bags and have two more to go. I think I will start a new batch when I’m down to one bag. This is a keeper! Thanks so much!

What kind of rice are you using?
I just used a regular white rice, Nothing special!
How much does the recipe yield? How big are the bags of broccoli?
I use 16 oz. Bags of Broccoli. This is for 4 recipes, so it will make 4 9×13 pans.
Do you have a substitute for the cream of chicken soups? Something healthier?
Sometimes I make my own cream of chicken soup! There are recipes you can follow online if you don’t want to use canned cream of chicken!
