This Chicken Fried Rice Recipe is SO good! One of our family favorites that we make almost every week! My kids love it, and I love that it’s so simple to make (plus loaded with veggies)! Plus, here are even more Family Dinner Recipes!
I don’t know why, but it seems Chicken Fried Rice is SO HARD to make at home. I have tried many different recipes and it just never seems to turn out right. Well, if that sounds familiar, this recipe is for YOU!
It’s Better Than Takeout and you can make it at HOME!!
Chicken Fried Rice Recipe
INGREDIENTS:
1 Pound of Cooked Chicken (Shredded, Rotisserie or Leftover)
2 Cups Cooked Brown Rice (Makes 4 Cups total)
1 Cup Frozen Corn
1 Cup Frozen Peas & Carrots
3 Eggs
1/2 Cup Soy Sauce
1/2 Cup Green Onions
1 Tbsp. Olive Oil
DIRECTIONS:
Cook Rice according to Package Directions adding about 1/2 Cup more water, Frozen Corn, Peas and Carrots to the pan
Cook Chicken in a Skillet or use leftover grilled chicken or rotisserie chicken
In a Large skillet add 1 Tbsp. of Olive Oil, Add in Cooked (And Cooled) Rice & Vegetables
Stirfry the Rice about 5 Minutes on Medium High Heat.
Move Rice to the side of the pan and spray pan with cooking spray
Scramble 3 Eggs until Cooked in the pan, slowly mix in with Rice and Vegetables, Add Soy Sauce
Salt and Pepper to Taste, Garnish with Green Onions
