Crockpot Cooked Carrots Recipe
INGREDIENTS:
2 one-pound bags baby carrots (I like the larger sized ones) 1⁄2 cup orange juice (fresh squeezed is great)
zest from one orange
1⁄4 tsp cinnamon
1⁄4 tsp nutmeg
2 TBS brown sugar
2 TBS cold water
1 heaping TBS cornstarch salt
DIRECTIONS:
In the bowl of a slow cooker, add baby carrots, orange juice, orange zest, cinnamon, nutmeg, and brown sugar.
Cover and cook on low for 7 hours or high for 4 hours.
In a small bowl, whisk cornstarch and water.
Pour slurry into slow cooker, mix gently with a spatula or wooden spoon.
Cover and cook on high for 30 additional minutes, or until sauce has thickened.
Top with salt to season and serve immediately.
