Buffalo Chicken Sandwiches Recipe

Shredded Buffalo Chicken Sandwiches
INGREDIENTS:
1 pound boneless skinless chicken breast 1⁄2 onion, chopped
2 cups low sodium chicken broth
1⁄2 cup Buffalo Wing Sauce (I like Frank’s) 5-6 rolls
lettuce, tomatoes, blue cheese, and ranch for garnish, optional
makes 5-6 sandwiches
DIRECTIONS:
In a slow cooker, add chicken breast, onion, and chicken broth.
Cook on low for 8 hours, or high for 4 hours.
Remove chicken from slow cooker, using 2 forks or a stand mixer, shred chicken breasts.
Remove chicken broth from slow cooker (you can remove or leave onions, up to you), and discard.
Add shredded chicken back to the slow cooker, add buffalo wing sauce, and cook on high for 15 minutes.
Cut your rolls in half, add 1⁄2 cup of the mixture to each roll, top with desired toppings, and serve.
