Crockpot Sloppy Joes Recipe
INGREDIENTS:
1 Tbsp olive oil
1 lb lean ground turkey
1 onion, diced
15 ounces no salt added tomato sauce
3 ounces tomato paste (half a small can)
2 Tbsp red wine vinegar
1⁄4 cup brown sugar
1 Tbsp liquid smoke, divided
1 Tbsp Worcestershire sauce
1⁄4 tsp seasoned salt
1⁄8 tsp freshly cracked black pepper
4 sandwich rolls (I like whole wheat)
DIRECTIONS:
In a large skillet, add oil, and heat over medium-high heat for 30 seconds.
Add onions and stir, and then place ground turkey on top of onions.
Cover and cook for 5 minutes.
Remove cover, using a spatula, break up the ground turkey to small pieces, stirring as you go.
Cover and cook for 3 more minutes, stirring occasionally.
Remove from heat, drain off grease/fat, set aside.
In the bowl of a slow cooker, add tomato sauce, tomato paste, red wine vinegar, brown sugar, 1⁄2 Tbsp liquid smoke, Worcestershire sauce, seasoned salt, and pepper. Whisk together completely.
Add turkey mixture to the slow cooker, stir to combine, cover.
Cook on low for 7 hours or high for 4 hours.
Stir in remaining 1⁄2 TBS liquid smoke.
Place 1/4 of the mixture on each sandwich roll and serve immediately (no one likes a soggy sloppy Joe!).
This recipe serves 4 or can be doubled to serve 8. Also, since the filling freezes very well, you can make this ahead of time and prepare a couple of freezer meals to eat later or to take to a friend in need!
