Sometimes it’s hard to find a healthy lunch that’s easy to make and I get so tired of the same old sandwiches and salads. I tried this new recipe for this cucumber and tomato salad that also had avocados & onion in it and it was DELICIOUS I’ve had it for lunch a few times this week and it’s amazing.
It’s pretty simple, all you have to do is wash and cut up your veggies and add in your spinach and you’ve got the perfect salad. This is also great to bring as a side dish to and barbecue if you’re looking for something healthy. I know everyone gets tired of the same old potato salad or chips or whatever, so this is a nice fresh way to mix it up and have something tasty and easy to make.

Wash and dry your spinach then put in a bowl
Cut up your avocados and red onions
Cut your red and gold tomatoes in half
Peel and slice your cucumber
Mix together and enjoy your delicious salad.
I use lemon juice with olive oil and salt and pepper as my salad dressing, but you can use regular dressing, it’s all up to you!
