Bake these if you are having an Easter Party or having Easter Lunch at your house! These Easter Cupcakes use some of my all-time favorite recipes! These are great recipes to keep on hand to make several fun desserts! Check them all out for some great recipes for your family!
Easter Cupcakes Recipe
Ingredients & Directions for Cupcakes and Cookies
Ingredients:
1 ½ Cups White Sugar
½ Cup Butter
2 Eggs
2 tsp. Vanilla Extract
2 Cups All-Purpose Flour
2 tsp. Baking Powder
½ Cup Milk
1/2 Cup Strawberry Puree
½ Cup Chopped & Smashed Strawberries
3-4 Drops of Red Food Coloring (Optional)
Directions:
Combine Strawberry Puree Butter & Sugar, Slowly add in Eggs and Vanilla (Add food coloring if desired)
Mix Dry Ingredients together and Add into Sugar Mixture
Slowly add in Milk and stir gently
Slowly stir in smashed strawberries
Pour batter into a Cake Pan or Cupcake Pan and Bake a Cake for 40 Minutes on 350 degrees, or Cupcakes for 20 Minutes on 350 degrees.
Ingredients:
1 1/2 Cups Butter
2 1/4 Cups Sugar
4 Eggs
2 tsp. Vanilla
5 1/4 Cups Flour
2 tsp. Baking Powder
1 tsp. Salt
Directions:
Cream Butter & Sugar until smooth
Add in Vanilla and slowly add eggs one at a time until well blended
Combine Flour, Baking Powder & Salt in a large measuring cup
Slowly add flour 2 cups at a time until it is well blended
Knead on a floured surface for about 1 min until well mixed
Place dough in the freezer for 30 min, or refrigerate for 2 hours
Roll Cookies out and cut into shapes
Bake at 400 Degrees for 7-8 Minutes
Ingredients:
7 Tbsp Water
4 Tbsp Ener-G Egg Replacer
7 Cups of Powdered Sugar
1/2 tsp. Cream of Tarter
Directions:
Combine Water & Egg Replacer in a Measuring bowl and beat with a fork until well mixed
Slowly add in cream of tarter and powdered sugar until stiff
Color with food coloring for piping icing
Slowly add in 1 tsp. of water at a time to change icing into a flood icing.
Can of Pillsbury Frosting for Cupcakes
Pink Wilton Candy Melts
Wilton Sucker Sticks
Follow Sugar Cookie Directions and bake Bunny Ears (Use the top of a Bunny Cookie Cutter)
Frost cookies with Piping icing, allow to dry, then flood the inside of the cookies
I used Pink Candy Melts for the inside of the bunny ears
Just put a few Candy melts in a Wilton decorating bag and melt in the microwave in 20-second increments.
Once melted cut off the tip of the decorating bag to pipe candy into the center of the bunny ears
Use a Wilton Sucker Stick to help support the Cookies on top of the cupcakes, this is what keeps the weight of the cookies from falling over :)

Strawberry Cupcake Ingredients:
- 1 ½ Cups White Sugar

Royal Icing Ingredients:
- 7 Tbsp Water

- Can of Pillsbury Frosting for Cupcakes
- Pink Wilton Candy Melts
- Wilton Sucker Sticks
Instructions
Cupcake Directions
- Combine Strawberry Puree, butter, and sugar
- Slowly add in eggs and vanilla (Add food coloring if desired)
- Mix dry ingredients together
- Slowly add dry ingredients to sugar mixture
- Slowly add in milk and stir
- While stirring slowly, add in smashed strawberries
- Pour batter into cupcake pan
- Bake for at 350 for 40 minutes and allow to cool
