Easy Freezer Mac & Cheese Recipe
INGREDIENTS:
1 pound elbow macaroni or macaroni of your choice 4 TBS butter
2 cloves garlic, minced
3 TBS all-purpose flour
3 1⁄2 cups whole milk
1 TBS dijon mustard
1⁄2 tsp salt
1⁄2 tsp black pepper
4 ounces fontina cheese, shredded
4 ounces asiago cheese, shredded
8 ounces extra-sharp cheddar cheese, shredded 4 ounces parmesan cheese, shredded
DIRECTIONS:
In a large pot, cook pasta according to package directions, stopping boiling 2 minutes before the recommended time. Drain and return pasta back to pot; set aside.
In a medium-sized saucepot, melt butter over medium heat. Add garlic, sauté 30 seconds. Add flour, whisk quickly over medium-high heat for 1 minute. Slowly pour in milk, whisking while pouring. Turn heat to medium-high, and whisk slowly for 4-5 minutes or until mixture has thickened. Add mustard and whisk; remove from heat. Add half of the cheeses (2 ounces fontina, 2 ounces asiago, 4 ounces extra-sharp cheddar, 2 ounces parmesan) to the milk mixture and whisk until completely melted.
Pour cheese sauce over the pasta in the large pot, mix well to coat. Pour the pasta with sauce into a large 9×13 baking dish. Cover the pasta with additional cheeses that are left.
Allow it to cool completely – at least 2 hours. Cover pasta tightly with a lid or 2 layers of aluminum foil. Freeze for up to 4 months.
To cook: Preheat oven to 350 degrees F. Remove from freezer, place into the oven and cook for 1 hour, covered with foil. Remove foil and cook an additional 20 minutes or until cheese is bubbling and browning a bit on the top.

My kids love Mac & Cheese, so I am excited to have this recipe available for a last-minute meal idea for lunch or dinner! It would also be a great option to take with you to a party, event, or holiday!

I made a whole freezer full of food for my cousin who just had a baby…and I stored the Freezer Mac & Cheese in three loaf pan size containers….how would you suggest I adjust the cook time from the freezer….an hour seems to be too long – I don’t want it to dry out…
When do you add in the salt and pepper? I see it on the ingredient list but not in the directions?
I found this recipe extremely fast and easy!! It took longer for mine to thicken but that is because I doubled the recipe. I love the different cheeses in it. Your making a cheese sauce from scratch so it’s going to take a little longer and not be as easy as if it’s from a box, but so much more satisfying!!
