My kids LOVE to help me make this cake roll recipe! It’s a fun twist on traditional cake, with the color and look of Christmas! One of my favorite parts about Christmas is all of the Holiday baking!
I love to make treats and holiday favorites that have become our christmas traditions over the year! My sister-in-laws even beg me to make specific treats at Christmas because it is one of their favorite times of the year!
Funfetti Christmas Cake Roll Recipe
INGREDIENTS:
6 Eggs
1 White Cake Mix
¼ Cup Sour Cream
¼ Cup Water
¼ Cup Vegetable Oil
1 Large Container of Christmas Colored Sprinkles
Frosting Ingredients:
2- 8 oz. packages of Cream Cheese
2 Sticks of Butter at Room Temperature
2 Cups Powdered Sugar
2 tsp. Vanilla
DIRECTIONS:
In a Bowl beat eggs with an electric mixer on high speed until thick and yellow
Add in the Cake Mix, Sour Cream, Water and Oil and mix on low for about 30 seconds to 1 minute
Gently stir in ½ Cup of Christmas Colored Sprinkles
Spray a 10×15 Jelly Roll Pan with Non Stick Cooking Spray, then place Parchment Paper over the spray to cover the pan completely.
Pour batter over the Parchment Paper and Bake for 12-13 minutes at 350 Degrees.
Remove from oven and immediately turn over onto a towel that is covered in powdered sugar.
Roll while hot and place on a baking sheet or set aside on the counter to cool.
When the cake is completely cooled, Unroll the towel carefully.
Mix all the frosting ingredients together.
Spread with ⅓ rd of the Frosting and then Sprinkle with Christmas Sprinkles lightly before rolling.
Slice off about 1” of both ends of the cake to make it look even
Frost using a spatula or Large Decorating Tip (I like to use a decorators bag and large tip to create swirls because it’s quick, easy and hard to mess up!)
Cover with Christmas Sprinkles using your hands to gently press sprinkles into the icing.

Can I sub the vegetable oil for olive oil?

Will it be okay, after it’s all done…to freeze it?? And then take it out a day before, and put in fridge?!
I would freeze it before you add the icing on the outside, the icing is the part that won’t freeze and thaw very well
I tried this Christmas Roll & did everything as you did but mine splits to much in too many places. would like to know what I’m doing wrong ? Thank you, Lena
Hi Lena, I’m not sure. You could try letting it cool thoroughly before icing if it was still warm when you were working on that part. Also, if your altitude is different that might affect it also. Maybe just give it another whirl and see if it works and just try to follow the directions carefully. Good luck!
Can this re pie be used with any flavor cake mix
