My kids are huge fans of any kind of “rice recipes”. This is great because you can add chicken or steak to the rice along with some veggies for a healthy meal! One of the things I love about this “healthier chicken fried rice” is that I can make it with whole grain brown rice and they can’t even tell a difference!
It’s so easy to throw together when I need a quick meal idea! Plus, it’s so much healthier than take-out!

Healthy Chicken Fried Rice Recipe
INGREDIENTS:
2-3 Boneless Skinless Chicken Breast
2 tablespoons of Oil
3/4 of a cup of Egg Whites and 1 whole Egg (beaten)
1 teaspoon of Minced Garlic
1 bundle of Green Onions (chopped)
1/2 a can of Peas and Carrots Blend (drained)
1/2 a can of Corn (drained)
2 – 3 packages of Uncle Ben’s Whole Grain Brown Rice
3 tablespoons of Low Sodium Soy Sauce
DIRECTIONS:
In a large skillet scramble your egg whites and whole egg. Set aside scrambled eggs.
Dice up chicken breast and place in a large skillet with oil and begin to brown chicken.
Half way through add in green onions and minced garlic and finish browning chicken.
Reduce heat and add in peas, carrots, and corn. Stir often until all veggies are heated.
Add in scrambled eggs and soy sauce and blend all ingredients well.
Prepare rice according to instructions on package, and place in a large bowl.
Dump your prepared chicken and veggies into the bowl and blend rice and all ingredients well.
Serve and enjoy!
