They are quick and easy options that save me time and money. I can make several meals at one time and space them out over a month or two. It gives us lots of options for eating at home without having to spend a lot of time in the kitchen!
Mexican Chicken Avocado Bake Recipe
INGREDIENTS:
16 oz. Sour Cream (Approx. 2 Cups)
2 Cups Salsa Verde
1/2 Cup Milk
6 Flour Tortillas (Taco Size)
3 Cups Cooked & Shredded Chicken
2 Avocados Diced
8 oz. Shredded Mexican Blend Cheese
DIRECTIONS:
Combine the Sour Cream, Milk and Salsa Verde
Spray a 9×13 Baking Dish with Cooking Spray
Cut the Tortillas in Half so you have 12 pieces
Spread a small amount of the Sour Cream Mixture on the bottom of the pan
Layer 6 Halves of the Tortillas in your pan
Layer with half of the Chicken & half the Avocados over the Tortillas
Spread half the Sauce Mixture over the Chicken & Avocados
Repeat with Tortillas, Chicken, Avocados, Sauce
Top with Cheese
Cover Tightly and Freeze at this point
Remove from Freezer, Thaw, and Bake at 350 Degrees for 45-50 Minutes

Is this recipe for one pan or more? and if you don’t freeze it first, how long do you bake it? 45-450 minutes still?
Yes it should fit into one 9X13 and you will bake for 45-50 minutes if cooking right away also. The reason it’s the same is because if you have frozen it, you need to thaw it in your refrigerator prior to cooking it. I hope you enjoy the recipe!
