One of my family’s long-standing traditions during summer months is this No-Bake Lemon Cheesecake!
I’m not really sure where the recipe came from or when we first started making this but I remember making it all the time growing up at my Grandmother’s house so it’s been a staple in our family meals for a long time.
What I love about this Lemon Cheesecake Recipe is that it only takes a few ingredients and it’s SUPER quick to put together since you don’t have to bake anything. Also, since it’s a cheesecake you can make it the day before a party and have it in the fridge chilling overnight so you’re not having to bake it the same day as you’re having company over.
This cheesecake is a little soft since it’s not baked, so make sure you allow 24-48 hours for it to chill in the fridge or place it in the freezer for a few hours before moving to the fridge to make sure it’s easy to cut and serve.
Here’s the Simple Recipe, You can use a Ready-Made Pie Crust, or you can make your own homemade graham cracker crust. It’s easier with the ready-made crust, but it’s much better with the homemade crust. I use 1 package of Graham Crackers, 2 TBSP of butter and 2 TBSP of Sugar for a Graham Cracker Base, then pour the cheesecake mixture on top!
- 2 8 oz. Packages of Cream Cheese (Softened)
- 1/2 Cup Lemon Juice
- 1 Can of Sweetened Condensed Milk
- 1 tsp. Vanilla
- 1 Ready-Made Graham Cracker Crust
- Combine all ingredients in a Food Processor and blend about 30 seconds to 1 Minute until everything is well mixed.
- Pour Cheesecake Mixture into the Ready-Made Graham Cracker Crust
- Chill 24-48 Hours, serve chilled with Strawberries
