One of my families long standing traditions during summer months is this No Bake Lemon Cheesecake. I’m not really sure where the recipe came from or when we first started making this but I remember making it all the time growing up at my Grandmothers house so it’s been a staple in our family meals for a long time.
What I love about this Lemon Cheesecake Recipe is that it only takes a few ingredients and it’s SUPER quick to put together since you don’t have to bake anything. Also, since it’s a cheesecake you can make it the day before a party and have it in the fridge chilling overnight so you’re not having to bake it the same day as you’re having company over.
This cheesecake is a little soft since it’s not baked, so make sure you allow 24-48 hours for it to chill in the fridge or place it in the freezer for a few hours before moving to the fridge to make sure it’s easy to cut and serve.
Here’s the Simple Recipe, You can use a Ready Made Pie Crust, or you can make your own homemade graham cracker crust. It’s easier with the ready made crust, but it’s much better with the homemade crust. I use 1 package of Graham Crackers, 2 TBSP of Butter and 2 TBSP of Sugar for a Graham Cracker Base, then pour the cheesecake mixture on top!Print
- 2 8 oz. Packages of Cream Cheese (Softened)
- 1/2 Cup Lemon Juice
- 1 Can of Sweetened Condensed Milk
- 1 tsp. Vanilla
- 1 Ready Made Graham Cracker Crust
- Combine all ingredients in a Food Processor and blend about 30 seconds to 1 Minute until everything is well mixed.
- Pour Cheesecake Mixture into the Ready Made Graham Cracker Crust
- Chill 24-48 Hours, serve chilled with Strawberries
