My kids (and hubby) are LOVING this new Parmesan Mozzarella Tenders Recipe! It’s super easy to make and can be a new Freezer Meal Option as well! When it comes to crowd favorite, extremely easy, and freezer friendly meals, these Parmesan Mozzarella Chicken Tenders are the best! As you know, I’m always on the lookout for recipes that can be made ahead of time and in a slow cooker. Those recipes are usually soups and stews and while I love them (and they are especially delicious during these chilly months) from time to time I get cravings for other meals, like chicken and meat. But those two are not the most affordable ingredients so I have my eyes set on coupons, deals, and fun and delicious ways to make sure I stretch them as much as possible.
Our latest favorite way to cook chicken while also serving it as the main part of the meal? These Parmesan mozzarella Chicken tenders! Not only are they incredibly delicious but they are also super easy to make and wait for it, yes! They are freezer friendly!
Actually, I always make a couple of batches and freeze them. It’s way healthier and way cheaper than those frozen chicken tenders they sell at supermarkets, and if I’m being completely honest with you, it takes me around one hour to have enough chicken tenders for a couple of weeks.
The secret to making sure they are great after freezing is to cook them while they are still frozen instead of waiting for them to thaw. Another thing is adding the sauce and cheese later just before baking, and just freezing the tenders alone, the great thing about doing this is that you can change the sauce each time.
And while you can skip the parmesan that we add to the breadcrumbs, you only need very little and it makes a huge difference in amping up the cheese and Italian flavor, which in my opinion is totally worth it!
Parmesan Mozzarella Tenders
Ingredients:
2 Cups penne pasta
6 Boneless chicken breasts sliced in halves
1 Cup all-purpose flour
2 Eggs
1/2 Tsp salt
1/2 Tsp pepper
1 Cup dry bread crumbs
1 Cup parmesan cheese, grated
1/8 Cup chopped parsley to garnish
Directions:
Preheat oven to 450 degrees.
Line a baking tray with aluminum foil and coat it with cooking spray.
In a large pot bring water to a boil and add the penne pasta.
Cook pasta until tender.
Pour the flour and half of the parmesan cheese in a medium bowl.
Dip chicken halves in the flour bowl and cover fully.
In a separate bowl, beat the eggs and mix in the salt and pepper.
Dip chicken in the egg then roll them in the breadcrumbs in a separate dish.
Lay the chicken breast halves on the baking tray.
Bake for 10-12 minutes on each side until fully cooked.
Add the rest of the grated cheese on top.
Turn off the oven but allow the heat to melt the cheese.
Put chicken over the pasta on a plate.
Garnish with chopped parsley and a few extra dashes of salt and pepper.
Serve and enjoy.
