Peppermint White Chocolate Cookies Recipe
INGREDIENTS:
3 1/4 Cups Flour
1 tsp. Baking Soda
1/4 tsp. Salt
1 Cup Butter
3/4 Cup Sugar
3/4 Cup Brown Sugar
2 tsp. Vanilla
2 Eggs
2 Cups White Chocolate Chips
1 Cup Peppermint Crunch Chips
DIRECTIONS:
Cream Butter & Sugar in a mixer until smooth.
Slowly add in Eggs and Vanilla.
Stir in 1/2 of Flour, Baking Soda, & Salt.
Slowly add in the remaining flour.
Add in White Chocolate and Peppermint pieces.
Stir well, Roll into 1″ balls and place on a greased baking sheet, or one lined with parchment paper.
Bake at 350 Degrees for 10-12 minutes.

My family loved these cookies. I made my own peppermint chips by crushing candy canes. I also spread some of the dough in a half sheet pan to make bar cookies and the rest of the dough baked as individual cookies. We liked the bar cookies best. Very tasty recipe.
Yields more than 18 cookies – I rolled them into approx 1” balls, and got well over 30 cookies. Also, 2 cups of white chocolate chips seemed a lot and the cookies took a while longer to bake as they were so chocolatey. I would half the amount of chocolate chips and even half the crushed peppermint/peppermint chips. And maybe add 1/4 teaspoon of peppermint oil.

can you just crush some candy canes instead of getting the peppermint crush chips? or will it be completely different?
