Red, White, and Blue Coffee Cake Recipe

Red, White, and Blue Coffee Cake Recipe
INGREDIENTS:
For Cake:
1 1⁄2 cups all purpose flour
1 tsp baking powder
1⁄4 tsp salt
1⁄2 cup butter, room temperature 1 cup white granulated sugar
2 eggs
1 tsp vanilla extract
3 TBS plain yogurt
1⁄3 cup milk (any kind is fine)
1 cup blueberries (fresh or thawed)
1 cup sliced strawberries (usually just cut each strawberry into 4ths)
For Topping:
2 TBS butter, room temperature
1⁄3 cup white granulated sugar
1⁄4 cup all purpose flour 1⁄2 tsp ground cinnamon
DIRECTIONS:
Preheat oven to 350 degrees F.
For the cake:
In a medium bowl, sift together flour, baking powder, and salt; set aside.
Using a stand mixer or electric mixer, cream together the butter and sugar until light and fluffy, 1-2 minutes.
Add eggs, one at a time, beating after each egg.
Continue beating 2-3 minutes or until fluffy.
Add vanilla extract and yogurt, beat well to combine.
Add flour mixture to wet mixture a little bit at a time, alternating with the milk (flour mixture – milk – flour mixture – milk – flour mixture) beat slowly until a cohesive dough forms.
Spray with nonstick spray or butter a square baking dish.
Add 1⁄2 the batter to the bottom of the dish.
Place berries in a medium bowl, dust with 1 TBS flour, and toss to coat. Sprinkle berries on top of the batter, until covered.
Pour remaining batter over the top, and spread with a spatula to cover; set aside.
For Topping:
Combine all topping ingredients in a bowl. Using a fork or pastry cutter, combine until the texture resembles a coarse sand. You can also use your hands or a stand mixer fitted with a paddle attachment for this step.
Spread topping over cake batter; place into the center of the oven and cook for 45-60 minutes, or until toothpick comes out clean.
Cool cake completely on a wire rack, then serve. Can be reheated to serve or served at room temperature.
Notes: Start checking cake at 45 minutes, but may take up to 60 minutes to bake fully in the center.
