One of the most important things for me about the holiday season is the breakfasts. We are expecting out of town guests and we also want to have cozy and comfortable little breakfasts with my family. So when this season rolls around I really want to amp up my breakfast game and create a couple more options that are as delicious as they are easy to make.
My favorite option so far has been donuts, so I’ve been having a lot of fun lately playing around with recipes and ideas and different topping and filling combinations. However, there’s one recipe that wins my heart every single time. Strawberry Buttermilk donuts.
These donuts are good, as in so good I just want to have them every single day and then some more. They are also incredibly packed with strawberry flavor and have a bit of tartness from the buttermilk that I personally love. They are sweet but not overly sweet so you can really feel all the flavors. And best of all they are really easy to make! Like so so easy you can make them in around 20 minutes from start to finish. Say what? Homemade donuts in 20 minutes? Count me IN!
The reason why they are so quick to make is that they are baked not fried (that also makes them healthier). Baked donuts are like a thicker version of a cake, which I personally love.
You can make them with frozen berries or fresh ones and best of all you can freeze them so you can make a big batch and then just place them into freezer-friendly bags and into the freezer for up to 6 months. Once you are ready to have them, just give them a quick spin in the microwave and you are all set.
Strawberry Buttermilk Donuts
This Strawberry Buttermilk Donuts Recipe is the perfect light breakfast recipe or snack for this holiday season.
Ingredients
- 1 Cup flour
- ½ Cup cornstarch
- 1 Cup buttermilk
- 1,5 oz strawberry flavored jelly
- ¼ Cup sugar
- 2 Tsp baking powder
- Pinch salt
- 1 Cup chopped strawberries
- ¼ Cup butter
- 2 Tsp vanilla extract
- 2 Eggs
- 2 Tbsps melted butter
Glaze
- 1 Cup powdered sugar
- ⅛ Cup water
- 2 Tbsps butter
- 1 Tsp vanilla extract
- ½ Tsp red food coloring
Instructions
- Preheat oven to 350F.
- Brush a donut baking pan with the melted butter.
- Mix in a bowl (with a blender if available) the buttermilk, sugar, baking powder, salt, butter, vanilla, strawberries, and eggs.
- Sift in the flour, cornstarch, and jelly. Stir until no clumps.
- Fill the pan with the batter and place in the oven.
- Bake for 15 minutes.
- Meanwhile, in a bowl mix the glaze ingredients, then fill a piping bag with it.
- When the donuts are ready, remove from the oven and let them cool down.
- Decorate with the pink glaze.
- Serve and enjoy.

The glaze should specify to use powdered sugar. Also, that batter part should specify to use and electric mixer or something that can effectively blend the strawberries.
