I'm sharing a new recipe with you today. I was shopping at Dollar General and grabbed some 7UP that's at their everday low price of 3 - 12 packs for $10! I've been wanting to try a cake with soda for a while and 7UP is perfect for this Strawberry Lemon Bundt Cake that I'm making for an upcoming party at my house with friends! I love that at Dollar General I don't have to find a sale, I already know the prices are always a good value.
I love making bundt cakes! They're so pretty and they always taste delicious. Bundt pans just seem to keep cakes moist and that is what makes a great cake to me!
Each month a group of my friends get together and have a bunco night. Do you like to have a reason to get together with friends? If so, this is a perfect way to do that! Each member of our group hosts in our home on the third Tuesday of the month. The host provides dinner, dessert and gifts for the bunco group.
I love making desserts and this Strawberry Lemon 7UP Bundt Cake was what I decided I wanted to make for the next time I host Bunco at my house. If you've never used soda in a recipe, you should try it! The 7UP in this cake recipe adds citrus flavor and makes this cake more moist!
Strawberry Lemon 7UP Bundt Cake
I just can't keep my mouth from watering just looking at this cake! You need to give it a try, it's so delicious! Don't forget to grab your 7UP at Dollar General while you're getting your other favorite things there.
To start making the recipe, you'll slice the strawberries and cover them with sugar. Just set them aside while you prepare the cake so they can soak up some of the sugar. The strawberries are for a garnish on top of the cake.
Next you'll start mixing the ingredients to make the cake. First, you'll beat the butter and sugar until it's creamy. Then you'll add in the lemon extract and eggs one at a time, mixing well between each egg.
Then add in the dry ingredients which include the flour, salt, sugar and gelatin mix. You'll want to mix the wet and dry ingredients together really well.
Now you'll slowly add in the 7UP and mix gently for one minute. Don't overmix! 7UP is the perfect soda for this cake because it already has a lemon lime flavor which goes perfect with the strawberry flavors!
Pour the batter into a greased Bundt pan and Bake the cake for one hour and 15 minutes at 325 degrees. While the cake is baking combine all the ingredients for the glaze which is the powdered sugar, vanilla, and heavy cream. You will want to use a hand mixer to get a smooth finish on this lemon glaze to drizzle on top of your cake!
After you take the cake out, let it sit for about 10 minutes in the bundt pan to cool before you flip it over to release it from the pan. If it sticks to the pan, you can gently use a knife to try and release the edges from the pan.
Be sure the cake is fully cooled before adding the glaze. A trick I learned on a cooking show is to cut small pieces of wax paper and lay them under the edges of your cake so if any of the glaze ends up on your cake stand or plate then you can just pull those wax papers out when you're all done frosting and your cake plate looks perfect!
Glaze Directions: Mix with a hand mixer 3 Cups of Powdered Sugar, 1 tsp. of Vanilla and 2 - 3 Tbsp. of Milk at a time until the consistency of the frosting is what you want. Pour the glaze over the cake and let it sit to harden a little before serving.
When you're ready to serve the cake, cut the pieces and lay them on your serving dishes and then top each piece with fresh strawberries! I love how much color this cake has, not to mention how good it tastes!
My bunco group is going to love this cake. I am planning to host again this coming Summer, so it will be a perfect light tasting cake to serve. Plus, the strawberries will also be perfect this time of year! I can't wait to share this recipe with all my friends!
Strawberry Lemon 7UP Cake
Ingredients
- Cake: 3 Eggs 3 cups Self Rising flour 2 Sticks of Butter Softened 1/2 tsp. Salt 2 cups sugar 1 tablespoons lemon extract (or Lemon Juice) 1/2 Cup of 7Up Soda 1 box of Strawberry Gelatin Mix
- Glaze: 3 Cups Powdered Sugar 1 tsp. Vanilla 2 - 3 Tbsp. Milk
Instructions
Preheat oven to 325 degrees
Slice strawberries and cover with 1/2 cup sugar, then set aside while you prepare the cake
In a large bowl, beat butter and sugar until creamy
Add in Lemon Extract and Eggs one at a time, mixing well between each egg
Add in Flour, Salt, Sugar, Gelatin Mix and mix well
Slowly add in 7UP Mixture and mix gently for 1 minute (Until mixed in, do not over beat)
Pour batter into a Greased Bundt Pan and Bake for 1 Hour and 15 minutes at 325 degrees
Allow cake to cool before frosting with the glaze.
Combine all ingredients for Glaze and mix using a hand mixer
Drizzle Glaze over cooled cake and serve with Fresh Strawberries
This Strawberry Lemon Bundt Cake is perfect for Valentine's Day, Easter, Mother's Day, Birthday Parties and any Summer gathering! My daughter loves strawberries. I always tease her that she is going to turn into one because she eats so many. I know she'd love this cake so I'm thinking about surprising my family with it on Valentine's Day this year! It's the perfect color too!

The recipe is still missing the amounts of each of the ingredients for the glaze. Could you please try again, I can’t find any glaze recipe that uses heavy whipping cream and I am intrigued. Also what size Gelatin Mix? 3 oz or 6 oz?
