How to Make BBQ Chicken Chopped Salad
It’s SO easy to make this! And frankly you don’t HAVE to make your own dressing. So, this recipe can be as easy as you want it to be! All of the ingredients are very simple to locate.
Ingredients for BBQ Chicken Chopped Salad
- Chicken
- BBQ Sauce – You can make it homemade or buy it from the store. I bought our favorite kind and it was fantastic!
- Black Beans
- Cilantro Ranch dressing – (Or any other type of dressing you prefer!
- Cherry Tomatoes
- Fire-Roasted Corn
- Green Onions
- Shredded Cheese – You can use whatever kind you like best!
- Tortilla strips salad toppers – Or, if you already have tortilla chips on hand, you can crunch those up, instead.
- Romaine Lettuce
Instructions for Chopped Chicken Salad
First, combine chicken and BBQ Sauce. Then set aside. This will go on top of the chopped salad.
Next, combine chopped romaine lettuce, cilantro, fire-roasted corn, black beans, tomatoes, shredded cheese, green onions, and tortilla chip strips. Mix together and drizzle on dressing. Mix well to thoroughly combine. Lastly, add the BBQ chicken on top! I love recipes like this because the beans, corn, and chicken make it a little more substantial and filling than just a regular salad. Do you like making salads like this?? Packed with BBQ chicken, corn, black beans, cilantro lime dressing, and more, this hearty salad is healthy, too!
Ingredients
- FOR THE BBQ CHICKEN:
- 1 pound boneless, skinless chicken, cooked and shredded
- FOR THE SALAD:
- 1 large head romaine lettuce, finely chopped (Or 1 bag of chopped romaine)
- 3/4 cup canned blackened or fire-roasted cooked corn
- 3/4 cup, black beans, cooked
- 1 cup shredded Monterey Jack cheese
- 3 green onions, diced
- 1 cup cherry tomatoes, halved
- 1 cup crushed tortilla chips
- 1/2 cup cilantro , roughly chopped
- 3/4 cup cilantro lime dressing
