This Cheeseburger Soup recipe is my family’s new favorite soup!! All of my kids like a cheeseburger, of course. So, this was a fun way to have one of their favorite things in a new cozy way! With a delicious combination of seasonings, veggies, hamburger, and of course cheese, I guarantee this recipe will soon be on your winter soup rotation!
How to Make Cheeseburger Soup
It’s really quite simple to make Cheeseburger Soup, though it does take a bit of time to simmer in-between ingredient additions. The nice thing is that many of you have these common ingredients in your pantry!
Cheeseburger Soup Ingredients
- Ground beef
- Butter
- Minced Garlic
- Onion
- Carrots
- Celery
- Potatoes
- Chicken Broth
- Flour
- Velveeta
- Milk
- Seasonings
- Sour Cream
- French Fried Onions and Green Onions for Garnish (If desired.)
In a large saucepan over medium heat, brown the hamburger until no longer pink, 6-8 minutes; drain and set aside.
In same saucepan, melt 2 tablespoons butter over medium heat. Add garlic and sauté for one minute. Sauté the carrots, onion, celery, parsley and basil until vegetables are tender, about 8-10 minutes.
Add potatoes, ground beef and broth. Bring to a boil. Reduce heat and simmer, covered for 10-12 minutes or until the potatoes are tender, which should be about 10-12 minutes.
While the potatoes are simmering, melt remaining butter in a small skillet. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes.
Reduce heat to low. Stir in cheese, milk, salt and pepper, and cook until the cheese melts. Remove from heat and blend in sour cream. If desired, serve with French fried onions crumbled on top and chopped green onions.
Top your Cheeseburger Soup with French fried onions and green onions, if desired. Store covered in the fridge for about a week. Soup will thicken while it is in the fridge, but when heated, it will become the proper consistency.
What kind of cheese do I use in Cheeseburger Soup?
You can use shredded Cheddar cheese, however this recipe calls for Velveeta. I used half original Velveeta and half Velveeta Queso Blanco. However, you can use whatever cheese you like, as long as you use about 2 cups of cheese.
