We are obsessed with soft cookies around here. Actually, to be completely honest, we are obsessed with any kind of cookie. Chewy, crunchy, soft, big or small, frosted or not, we just love them all!
I especially love the fact that cookies are always a crowd favorite so every time I need to make dessert for a crowd I know that cookies are the best fit. They are also portable (hello, perfect to bring as a housewarming or hostess gift) and you can have them by themselves or amp them up with a big scoop of ice cream on top.
And even though we love all types of cookies, these soft chocolate chunk cookie bars have become a favorite around here.
The reason? They are incredibly delicious! As in so good, you can’t just stop yourself from eating them. They are also really soft and chockful of chocolate chunks- seriously this is one of those recipes where the more the merrier so I really just crammed as many chocolate chunks as the cookie bars could hold up.
The great thing about them is that they are a crowd favorite so I know that everyone around here is going to love it. Actually, I made this recipe for a bake sale and it completely sold out in a couple of minutes, so needless to say I usually make this recipe for parties or gatherings.
They also make an incredibly delicious hostess gift and a really thoughtful gift for your neighbors so this one comes in handy for the holiday baking season that’s just around the corner. Give them as is or wrap them with some nice ribbon and a card.
Soft Chocolate Chunk Cookie Bars
Ingredients
1 ½ Cup all-purpose flour
½ Cup sugar
2 Tsp baking soda
½ Tsp salt
1 Large egg
½ Cup butter
1 Tsp vanilla extract
1 Tbsp vegetable oil
½ Cup chocolate chunks
Directions
Preheat the oven to 325F and brush a square baking pan with the vegetable oil.
In a medium-size bowl mix the flour, sugar, baking soda, salt, egg, butter, and vanilla.
Lastly, incorporate the chocolate chunks.
Stir until well incorporated.
Transfer to the baking pan and take to the oven.
Bake for about 15 minutes.
When done, remove from the oven and cut into squares.
Serve and enjoy.
